Anyone know anything about "custom and practise" employment laws? If I've been getting a certain amount of hours per week consistently for 2 years now does that over-ride the amount guaranteed in my original contract?

No. Your contract should have been updated to reflect those hours if they were to be guaranteed.

It's still there, but nobody seems to be using it.

People with jobs that aren't really shit - many of you have mentioned how helpful a good knowledge of Excel has been to you. I'm reasonably competent but I was wondering what things I should know how to do to make my Excel knowledge super useful/impressive?

Yup, Pivot Tables and charting on top of pivot tables.

If you can get your hands on some decent sized datasets (several hundreds of rows) then have a play with PowerView. It's a free addon for Excel 2007 and 2010 and comes built into Excel 2013.
Who the hell reads anything in sigs these days, unless it's an animated gif?
