Having the remains of the enchiladas I made the other day, much easier than I expected it to be, the tortillas took 20 minutes to make and the rest not much beyond that. Tastes pretty damn good too.

Dunno if you already did, but when boiling potatos to make mash, chop them up into quarters (or slices if you have a sharp enough knife) as it'll decrease cooking time.

If you don't mind the washing, the shredder attachment on a food processor makes it even faster. And easier to mash.

I made my own guacamole to go with tea when I got in this evening - lovely and fresh and healthy. Have recently managed to throw together successful lentil/spinach curry, spicy potatoes etc too. Yum yum.

I made the best chilli I've ever made tonight. It seems it's so good it's becoming addictive :lol:

Was stuffed after the first portion, I've now had 3 helpings cause it's so damn tasty ha.

Just cooked steamed barramundi with fresh garlic, ginger and spring onions, served with "asian salad" and dressed with oyster sauce, soy sauce, sesame oil, sesame seeds and fried shallots.

Home made guacamole is much better than the stuff you get in jars.

(You could say the same about a lot of foods but I've particularly noticed it with guacamole)

Random experiment. Fried together crushed chilli, garlic, lime juice and fish sauce, stirred through some spring onions and celery. Then mixed in a (chopped up) chicken breast.

Pretty awesome, though way too much garlic (too much fried garlic just isn't right, started to overcook and clump together), needed more spring onion but most disasterously I forgot to add coriander.

6/10. Lessons learnt.
